Potato Chippers

Giant potato chip like potato cakes. Breat with jelly, sour cream or just butter.

Ingredients

  • Vegetable oil spray
  • 2 eggs
  • 1 small onion, chopped
  • 2 tablespoons flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 cups shredded raw potatoes

Directions

  1. Grease a griddle or skillet with the vegetable oil spray. Preheat over medium heat.
  2. Combine all the ingredients. Spoon onto the hot griddle.
  3. Heat for 5-7 minutes, flipping once, until browned on both sides. Drain on a towel.
