There will be a rainbow on the dinner table when you serve Pot of Gold Pork Roast.
Ingredients
- 4 pound pork loin rib roast
- 2 tablespoons shortening
- 1 can golden mushroom soup
- 1/2 cup water
- 1/2 cup onion, chopped
- 1 tablespoon paprika
- 1 bay leaf
- 1/2 teaspoon salt
- dash pepper
- 6 carrots, cut in 2 inch pieces
- 4 medium potatoes, cut in 1/2
Directions
- In large skillet, brown meat in shortening. Pour off fat. Add soup, water, onion and seasoning. Cover. Cook over low heat 1 hour 15 minutes. Stir occasionally. Add carrots and potatoes; cook an additional hour or until done. Remove bay leaf.
