Ingredients
- 1 1/2 pound pork tenderloin
- 1 tablespoon butter
- 1 tablespoon olive oil
- Coarse salt and pepper to taste
- 8 ounces sliced mushrooms
- 2 unpeeled apples cut into cubes
- 1/2 cup whipping cream
- 1/4 cup apple cider
- 1 tablespoon Dijon mustard
Directions
- Cut tenderloin into 1/2 inch slices
- Cook slices in small batches in butter and oil over medium heat
- Sprinkle with salt and pepper and remove to a warm place
- In the same skillet cook apples and mushrooms until tender
- Stir in remaining ingredients and bring to a boil while stirring
- Pour sauce over pork and garnish with snipped chives
