  • 1 1/2 pound pork tenderloin
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • Coarse salt and pepper to taste
  • 8 ounces sliced mushrooms
  • 2 unpeeled apples cut into cubes
  • 1/2 cup whipping cream
  • 1/4 cup apple cider
  • 1 tablespoon Dijon mustard


  1. Cut tenderloin into 1/2 inch slices
  2. Cook slices in small batches in butter and oil over medium heat
  3. Sprinkle with salt and pepper and remove to a warm place
  4. In the same skillet cook apples and mushrooms until tender
  5. Stir in remaining ingredients and bring to a boil while stirring
  6. Pour sauce over pork and garnish with snipped chives
