Pork Chops with Caper Sauce

Pork Chops with Caper Sauce taste great when served with parslied potatoes and spinach salad.


  • 2 tablespoons vegetable oil
  • 4 pork loin blade chops, each cut 3/4 inch thick
  • 3/4 cup water
  • 1 teaspoon prepared mustard
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup sour cream
  • 2 teaspoons capers
  • parsley sprigs for garnish


  1. In 12 inch skillet over medium heat, in hot oil, cook pork loin blade chops until well browned on both sides, about 10 minutes. Spoon off drippings in skillet.
  2. To pork chops in skillet, add water, mustard, salt and pepper; over high heat, heat to boiling. Reduce heat to low; cover and simmer 20 minutes or until chops are tender, turning occasionally. Stir in cream and capers; do not boil or mixture will curdle.
  3. To serve, place pork chops on warm platter; spoon sauce over chops. Garnish with parsley sprigs.
