Serve fun to eat and saucy Porcupines with mashed potatoes.

Ingredients

  • 1 1/2 pounds ground beef
  • 2 eggs
  • 1 large can tomato juice
  • 1 can tomatoes crushed
  • 2 tablespoons vegetable oil
  • 2 cups rice, uncooked
  • 1 medium onion, diced
  • salt and pepper to taste

Directions

  1. Mix ground beef, rice, onion and eggs with your hands in a large bowl. Add salt and pepper to taste. Add more rice if mixture is too wet.
  2. Form mixture into golf ball sized balls and drop in a skillet of hot oil. Brown mixture on all sides. Drain.
  3. Add crushed tomatoes and 3/4 of can of tomato juice. Cover and let simmer about 30 minutes on medium to low heat, until rice is soft.
  4. Spoon tomato mixture over porcupines at intervals while cooking. Remove from stove and serve with mashed potatoes.
