Serve fun to eat and saucy Porcupines with mashed potatoes.
Ingredients
- 1 1/2 pounds ground beef
- 2 eggs
- 1 large can tomato juice
- 1 can tomatoes crushed
- 2 tablespoons vegetable oil
- 2 cups rice, uncooked
- 1 medium onion, diced
- salt and pepper to taste
Directions
- Mix ground beef, rice, onion and eggs with your hands in a large bowl. Add salt and pepper to taste. Add more rice if mixture is too wet.
- Form mixture into golf ball sized balls and drop in a skillet of hot oil. Brown mixture on all sides. Drain.
- Add crushed tomatoes and 3/4 of can of tomato juice. Cover and let simmer about 30 minutes on medium to low heat, until rice is soft.
- Spoon tomato mixture over porcupines at intervals while cooking. Remove from stove and serve with mashed potatoes.
