Old fashioned eggplant salad.
Ingredients
- 1 eggplant
- 2 onions, chopped
- 2 cloves
- 2 cloves garlic, minced
- 2 tomatoes, chopped
- salt to taste
- 1/4 teaspoon red pepper
- 1 tablespoon olive oil
- 4 tablespoons vinegar
Directions
- Cook the eggplant under the broiler for 15-20 minutes until soft, turning to cook evenly.
- Deskin the eggplant and mash. Add in the onion, cloves and garlic and mix well. Stir in the tomatoes, salt, pepper, vinegar and oil.
- Serve over greens.
