Pink Delight is a creamy molded salad with pineapple, coconut and pecans.

Ingredients

  • 1 large can crushed pineapple
  • 1 large package strawberry gelatin
  • 1 cup cottage cheese
  • 1 small carton sour cream
  • 1 large container Cool Whip, thawed
  • 1/2 cup pecans, chopped
  • 1/2 cup flaked coconut

Directions

  1. Place pineapple in a large saucepan. Add gelatin; heat until gelatin dissolves. Remove from heat. Cool slightly. Add remaining ingredients; blend thoroughly. Pour into a mold and chill until firm.
