Ingredients

  • 4-1/2 cups flour
  • 2-1/2 cups sugar
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1 tablespoon cinnamon
  • 1-1/2 teaspoons salt
  • 2 cups vegetable oil
  • 6 eggs
  • 3 cups grated zucchini
  • 2 cups crushed pineapple, drained
  • 3 teaspoons vanilla

Directions

  1. Combine flour, sugar, baking powder, baking soda, cinnamon and salt; set aside.
  2. Mix together vegetable oil, eggs and vanilla.
  3. Blend flour combination into egg mixture.
  4. Fold in pineapple and zucchini.
  5. Pour batter into greased muffin tins.
  6. Bake at 325 degrees for 20-25 minutes.
