Ginger and pineapple pork dinner.
- 2 pounds lean pork shoulder meat, cut into 1-inch cubes
- 1 (14 ounce) can pineapple chunks, drained juice reserved
- 1/4 cup vinegar
- 1 teaspoon ginger
- Mix everything together in a skillet. Simmer for 1 hour, adding pineapple liquid as needed. Chill and skim the fat off the top. Reheat. Wonderful served over rice.
