These easy-to-make muffins make an excellent breakfast snack.
Ingredients
- 1 cup crushed pineapple with juice
- 1 cup sour cream
- 1 egg
- 1/4 cup butter, melted
- 1-1/2 cups flour
- 1 cup oats
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup raisins
Directions
- Mix together pineapple, sour cream, egg and butter; blend well.
- In a separate bowl, combine flour, oats, sugar, baking powder, cinnamon, nutmeg, salt and raisins.
- Blend flour combination into pineapple mixture.
- Pour batter into greased muffin tins.
- Bake at 350 degrees for 30-35 minutes.
