Pineapple Meat Loaf

The pineapple give a whole new taste to meatloaf.

Ingredients

  • 1 can unsweetened crushed pineapple, undrained
  • 3 tablespoons catsup, divided
  • 1 pound ground chuck
  • 2 slices bread, crumbled
  • 2 eggs, beaten
  • 1 onion, minced
  • 1 teaspoon horseradish
  • 1 teaspoon soy sauce

Directions

  1. Drain pineapple, reserving 2 tablespoons juice.
  2. Add one tablespoon catsup to reserved juice and mix.
  3. Set aside.
  4. Combine drained pineapple, remaining catsup and the next 6 ingredients in a bowl.
  5. Shape into a 8 x 5 inch loaf.
  6. Place loaf on rack in broiler pan.
  7. Bake at 350 degrees F for 45 minutes.
  8. Remove from oven and brush with reserved pineaplle juice mixture.
  9. Bake an additional 15 minutes or until done.

What size can of pineapple - small or large?

I am a nanny and this recipe was fun and easy to make with my kids. I added some extra veggies and it was still great!
