A pineapple and carrot salad mold.


  • 1 large package lemon or orange gelatin
  • 1 cup pineapple juice
  • 1 cup boiling water
  • 1 cup crushed pineapple
  • 1 1/2 cups grated raw carrots
  • 1/2 cup nuts (optional)


  1. Stir gelatin in boiling water until dissolved, add pineapple juice. Refrigerate. When it begins to thicken, stir in the other ingredients. Pour into mold and refrigerate until set.
