A pineapple and carrot salad mold.
- 1 large package lemon or orange gelatin
- 1 cup pineapple juice
- 1 cup boiling water
- 1 cup crushed pineapple
- 1 1/2 cups grated raw carrots
- 1/2 cup nuts (optional)
- Stir gelatin in boiling water until dissolved, add pineapple juice. Refrigerate. When it begins to thicken, stir in the other ingredients. Pour into mold and refrigerate until set.
