This sweet carrot cake is ideal for serving at large family gatherings or simply to have as an afternoon snack. Top with your favorite cream cheese frosting.
Ingredients
- 1-1/2 cups canola oil
- 2 cups sugar
- 3 eggs
- 2 teaspoons vanilla
- 3 cups shredded carrots
- 1 (8-ounce) can crushed pineapple, undrained
- 1/2 cup chopped nuts
- 3 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
Directions
- Mix together canola oil, sugar, eggs and vanilla. Add carrots, pineapple and juice. Blend well.
- In a separate bowl, combine flour, baking soda and cinnamon.
- Blend flour combination into carrot mixture. Fold in nuts.
- Pour batter into a greased 9 x 13-inch baking dish. Bake at 350 degrees F for 40-50 minutes.
