This sweet carrot cake is ideal for serving at large family gatherings or simply to have as an afternoon snack. Top with your favorite cream cheese frosting.

Ingredients

  • 1-1/2 cups canola oil
  • 2 cups sugar
  • 3 eggs
  • 2 teaspoons vanilla
  • 3 cups shredded carrots
  • 1 (8-ounce) can crushed pineapple, undrained
  • 1/2 cup chopped nuts
  • 3 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon

Directions

  1. Mix together canola oil, sugar, eggs and vanilla. Add carrots, pineapple and juice. Blend well.
  2. In a separate bowl, combine flour, baking soda and cinnamon.
  3. Blend flour combination into carrot mixture. Fold in nuts.
  4. Pour batter into a greased 9 x 13-inch baking dish. Bake at 350 degrees F for 40-50 minutes.
