Pineapple and Curry Vinaigrette

Use to dress a simple spinach salad or as a marinade for chicken, pork or shrimp.


  • 3 ounces pineapple juice
  • 5 teaspoons apple cider vinegar
  • 3-1/2 tablespoons olive oil
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sugar
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon curry powder
  • dash of cumin
  • salt to taste


  1. Place all of the ingredients in a small jar, and close with a tight fitting lid.
  2. Shake the jar to combine the ingredients and then let stand for 3 minutes to allow the flavors to blend.
