Ingredients

  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup light corn syrup
  • 1/4 cup rum
  • 1, 8 ounce can crushed pineapple in unsweetened juice, undrained
  • 1/2 cup sugar
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 cup coconut, flaked

Directions

  1. In a medium bowl, combine flour, sugar, baking powder, baking soda and salt. In a large bowl, combine eggs, corn syrup, oil and rum. Beat with mixer until well blended.
  2. Gradually stir in flour mixture until moistened. Stir in pineapple with juice and coconut. Pour mixture into greased and floured loaf pan.
  3. Bake 60 to 65 minutes or until wooden skewer inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan and cool on wire rack.
