Pike's Peach Cobbler can be made with either fresh or canned peaches.

Ingredients

  • 3 cups sliced peaches, fresh or canned
  • 1/4 cup plus 3 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon grated lemon peel
  • 1 teaspoon almond extract
  • Dough: 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1/3 cup vegetable shortening
  • 1/2 cup milk
  • 1 egg

Directions

  1. Arrange peaches in a well buttered 8 inch square baking pan. Sprinkle with mixture of 1/4 cup sugar, lemon juice, lemon peel and almond extract. Heat peaches in 375 degree F oven while preparing dough.
  2. Dough: Combine flour, salt, baking powder and 1 tablespoon sugar; cut in shortening until crumbly. Add milk and egg. Stir until just moistened.
  3. Spoon small dollops of dough over hot peaches and spread dough; sprinkle with 2 tablespoons sugar. Continue baking at 375 degrees F for about 40 minutes.
