Pickled Eggs in beet juice is a traditional favorite made simple.

Ingredients

  • 12 hard boiled eggs
  • 2 cups cooked beets with liquid
  • 1/2 cup vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 3 whole peppercorns
  • 1/4 bay leaf

Directions

  1. Peel eggs. Place in a large bowl. Combine remaining ingredients in a saucepan. Heat until sugar dissolves. Pour over eggs. Refrigerate. Let stand for 2 days.
