Pineapple and carrot cake.

Ingredients

  • Vegetable oil spray
  • 3 eggs
  • 1/2 cup margarine, softened
  • 1 cup pineapple juice
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 3 cups grated carrot
  • 1 cup well-drained crushed pineapple

Directions

  1. Preheat oven to 350 degrees Fahrenheit. Grease a 9"x13" pan with the vegetable oil spray.
  2. Beat the eggs, margarine, and pineapple juice together. Stir in the flour, baking soda, baking powder and cinnamon. Fold in the carrot
  3. Pour into the prepared pan and sprinkle the pineapple on top. Bake for 30 minutes or until brown.
