Pineapple and carrot cake.
Ingredients
- Vegetable oil spray
- 3 eggs
- 1/2 cup margarine, softened
- 1 cup pineapple juice
- 2 1/2 cups flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 3 cups grated carrot
- 1 cup well-drained crushed pineapple
Directions
- Preheat oven to 350 degrees Fahrenheit. Grease a 9"x13" pan with the vegetable oil spray.
- Beat the eggs, margarine, and pineapple juice together. Stir in the flour, baking soda, baking powder and cinnamon. Fold in the carrot
- Pour into the prepared pan and sprinkle the pineapple on top. Bake for 30 minutes or until brown.
