Pepper Steak Meatballs are flavored with soy sauce and Burgundy wine.
Ingredients
- 1 1/2 pounds ground beef
- 1/2 cup milk
- 3/4 cup seasoned bread crumbs
- 2 tablespoons parsley
- 1 teaspoon each salt, pepper
- 1/4 cup margarine
- 1 can sliced mushrooms
- 2 onions, sliced
- 3 green peppers, cut in strips
- 3 tomatoes, quartered
- 1 tablespoon soy sauce
- 1, 10 ounce can beef broth
- 1/4 cup Burgundy
- 3 tablespoons cornstarch
- hot cooked rice
Directions
- Combine first 6 ingredients in bowl, mixing well. Shape into 1 inch balls. Brown in margarine in skillet. Add vegetables and saute until tender. Stir in next 3 ingredients with 1/3 cup water. Simmer for 20 minutes.
- Blend cornstarch with 1/4 cup cold water in small bowl until smooth. Pour cornstarch glaze over meatballs and vegetables. Cook 2 to 3 minutes. Serve over rice.
