Pepper Steak in a Crock Pot

This dish can be served over noodles or rice.

Ingredients

  • 2 lb. beef round steak
  • 2 tbsp. cooking oil
  • ¼ c. soy sauce
  • 1 medium onion, chopped
  • 1 tbsp. sugar
  • ½ tsp. salt
  • ¼ tsp. pepper
  • ¼ tsp. ground ginger
  • 4 tomatoes, cut into eighths
  • 2 lg. green peppers, cut into strips
  • ½ c. cold water
  • 1 tbsp. cornstarch

Directions

  1. Cut beef into 3-inch x 1-inch strips.
  2. Brown in oil in a skillet.
  3. Transfer to a slow cooker.
  4. Combine the next seven ingredients; pour over beef. Cover and cook on low for 5 - 6 hours or until meat is tender.
  5. Add tomatoes and green peppers; cook on low for 1 hour longer.
  6. Combine the cold water and cornstarch to make a paste; stir into liquid in slow cooker and cook on high until thickened.
