This recipe for Pepper Jelly makes 3 pints.  Serve over a brick of cream cheese and have a variety of crackers available.

Ingredients

  • 1 cup green peppers, chopped
  • 1/4 cup jalapeno peppers, chopped
  • 1 1/2 cups cider vinegar
  • 6 1/2 cups sugar
  • 5 drops green food coloring
  • 1 bottle of Certo
  • paraffin wax to seal

Directions

  1. Process peppers and 1/3 cup vinegar in blender container. Combine with sugar and remaining vinegar in saucepan. Boil for 5 minutes. Stir in food coloring and Certo.
  2. Pour into hot sterilized jars leaving 1/2 inch headspace. Seal with paraffin.
