Pepper and Onion Corn Sticks

Ingredients

  • 1 cup sifted flour
  • 1 cup cornmeal
  • 2 tablespoons sugar
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup chopped green pepper
  • 2 teaspoons minced onion
  • 1 cup milk
  • 1 egg, beaten
  • 1/4 cup oil

Directions

  1. Preheat oven to 425 degrees Fahrenheit. Grease and preheat cornstick pans as well.
  2. Mix and sift flour, cornmeal, sugar, baking powder and salt.
  3. Mix in the green pepper and onion.
  4. Add the remaining ingredients and mix only until they are combined, do not overmix.
  5. Pour batter into prepared corn stick pan, and bake for 12-15 minutes, until browned.
