This unusual combination results in a soft, moist bread that makes an excellent afternoon snack.
Ingredients
- 3 cups flour
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3 eggs
- 3/4 cup vegetable oil
- 3 teaspoons vanilla
- 2 cups pears, peeled and finely chopped
- 1 cup grated zucchini
- 1/2 cup chopped nuts
Directions
- Combine flour, sugar, brown sugar, cinnamon, nutmeg, baking soda, baking powder and salt; set aside.
- Beat eggs, vegetable oil, and vanilla.
- Blend flour combination into egg mixture.
- Fold in pears, zucchini and chopped nuts.
- Pour into greased loaf pans.
- Bake at 350 degrees for 1 hour.
