This unusual combination results in a soft, moist bread that makes an excellent afternoon snack.

Ingredients

  • 3 cups flour
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 3/4 cup vegetable oil
  • 3 teaspoons vanilla
  • 2 cups pears, peeled and finely chopped
  • 1 cup grated zucchini
  • 1/2 cup chopped nuts

Directions

  1. Combine flour, sugar, brown sugar, cinnamon, nutmeg, baking soda, baking powder and salt; set aside.
  2. Beat eggs, vegetable oil, and vanilla.
  3. Blend flour combination into egg mixture.
  4. Fold in pears, zucchini and chopped nuts.
  5. Pour into greased loaf pans.
  6. Bake at 350 degrees for 1 hour.
