Pear, Celery and Pecan Salad

This easy-to-make salad serves well at almost any function. For variety, try adding 1/4 cup cubed ham or Cheddar. Apples can be used instead of pears and walnuts instead of pecans.

Ingredients

  • 1/3 cup mayonnaise
  • 1 tablespoon vegetable oil
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 celery stalks, chopped
  • 3 pears, peeled, cored and chopped into bite-size pieces
  • 1/2 cup torn spinach
  • 1/2 cup chopped pecans

Directions

  1. Mix together mayonnaise, vegetable oil, lemon juice, salt and pepper.
  2. Place spinach leaves in the bottom of a large bowl. Add pears and celery. Pour dressing over top of salad, blending well. Top with chopped pecans.
  3. Keep refrigerated until ready to serve.
