This easy-to-make salad serves well at almost any function. For variety, try adding 1/4 cup cubed ham or Cheddar. Apples can be used instead of pears and walnuts instead of pecans.
Ingredients
- 1/3 cup mayonnaise
- 1 tablespoon vegetable oil
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3 celery stalks, chopped
- 3 pears, peeled, cored and chopped into bite-size pieces
- 1/2 cup torn spinach
- 1/2 cup chopped pecans
Directions
- Mix together mayonnaise, vegetable oil, lemon juice, salt and pepper.
- Place spinach leaves in the bottom of a large bowl. Add pears and celery. Pour dressing over top of salad, blending well. Top with chopped pecans.
- Keep refrigerated until ready to serve.
