A crisp, crunchy salad
Ingredients
- 4 cups shredded cabbage
- 1 cup finely chopped celery
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 teaspoon salt
- 1/4 cup chopped green onion
- 1/4 cup chopped green pepper
- 1/2 cup chopped cucumber
- 1 tablespoon butter
- 1/2 cup coarsely chopped dry roasted peanuts
- 2 tablespoons grated Parmesan cheese
Directions
- Mix together the cabbage and celery, Refrigerate.
- In a separate bowl stir together the sour cream, mayonnaise, salt, onion, green pepper and cucumber. Refrigerate.
- Prior to serving, melt the butter in a small skillet and lightly brown the peanuts. Immediately add in the cheese.
- Mix the vegetables and dressing together, and top with the peanut mixture.
