A family favorite, this peanut butter pudding is quick to make and healthier than traditional pudding recipes.
- 12 ounce block tofu, drained, patter dry
- 2 tablespoons natural creamy peanut butter
- 1 teaspoon vanilla extract
- 2 tablespoons agave nectar
- 1 teaspoon ground cinnamon
- Place all ingredients in a blender or food processor, and puree until smooth, scraping down sides of receptacle as needed. Serve chilled.
