Peachy sweet potatoes

Ingredients

  • 21/4 pounds sweet potatoes, peeled, cut into 1/2 inch slices
  • 1 cup peach pie filling
  • 3 tablespoons butter or margarine, melted, divided
  • 1/2 teaspoon salt
  • 2 tablespoons brown sugar
  • 1/8 teaspoon cinnamon
  • 1/2 cup chopped pecans

Directions

  1. Mix together the potatoes, pie filling 2 tablespoon butter and salt in the slow cooker. Cover and cook on low for 8-10 hours or high for 3- 3 1/2 hours.
  2. In a small skillet, saute the brown sugar, cinnamon, 1 tablespoon butter and pecans for 3 minutes. Allow to cool.
  3. When ready to serve, stir the potatoes and then top with the pecan mixture.
