These sweet and moist muffins will be quite popular at your next breakfast gathering.
Ingredients
- 1 cup oats
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 2 tablespoons molasses
- 1 teaspoon vanilla
- 1 egg
- 1-1/4 cup peaches, diced
- 3/4 cup pecans, chopped
- 1/4 cup brown sugar
- 1-1/2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Directions
- Mix together oats and buttermilk.
- Stir in vegetable oil, molasses, vanilla and egg.
- Combine baking soda, baking powder, cinnamon, brown sugar and salt; add to egg mixture.
- Fold in peaches and pecans.
- Pour batter into greased muffin pans.
- Bake at 400 degrees for 20 minutes.
