The addition of fresh peaches and blackberries to this slaw adds a sweet-tartness that blends beautifully with the cabbage, white balsamic vinegar and blue cheese.
Ingredients
- 1/4 cup white balsamic vinegar
- 1/4 cup olive oil
- 1 teaspoon sugar
- Sea salt and freshly ground pepper
- 1 tablespoon snipped fresh chives
- 1 tablespoon snipped fresh chives
- 2 white peaches, thinly sliced
- 1 yellow peach, thinly sliced
- 1/2 pint blackberries
- 2 ounces coarsely crumbled blue cheese
Directions
- Place the vinegar, olive oil, sugar, chives and a pinch of salt and pepper into a small bowl and whisk vigorously until thoroughly blended.
- Shred the cabbage and place into a salad bowl, then add the sliced peaches and toss to combine.
- Pour the vinaigrette over the cabbage mixture and gently toss to coat, then top with the fresh blackberries and the blue cheese.
