The addition of fresh peaches and blackberries to this slaw adds a sweet-tartness that blends beautifully with the cabbage, white balsamic vinegar and blue cheese.


  • 1/4 cup white balsamic vinegar
  • 1/4 cup olive oil
  • 1 teaspoon sugar
  • Sea salt and freshly ground pepper
  • 1 tablespoon snipped fresh chives
  • 1 tablespoon snipped fresh chives
  • 2 white peaches, thinly sliced
  • 1 yellow peach, thinly sliced
  • 1/2 pint blackberries
  • 2 ounces coarsely crumbled blue cheese


  1. Place the vinegar, olive oil, sugar, chives and a pinch of salt and pepper into a small bowl and whisk vigorously until thoroughly blended.
  2. Shred the cabbage and place into a salad bowl, then add the sliced peaches and toss to combine.
  3. Pour the vinaigrette over the cabbage mixture and gently toss to coat, then top with the fresh blackberries and the blue cheese.
