This fresh and simple dish adds vibrant green color to your dinner table. 


  • 2 teaspoons canola oil
  • 1 cup snow peas, trimmed
  • 1 cup sugar snap peas, fresh or frozen
  • 2 cups frozen peas (8 ounces)
  • 1/2 teaspoon freshly grated lemon zest
  • 4 teaspoons lemon juice
  • 1-1/2 teaspoons dried tarragon
  • 1 teaspoon butter
  • Sea salt to taste


  1. Place the oil in a large sauté pan and set over medium-heat.
  2. Add in the snow peas and sugar snap peas and sauté for 2 minutes, then add the peas and cook for an additional 3 minutes.
  3. Remove the pan from the heat and add the lemon zest, lemon juice, tarragon, butter and salt, and stir to combine. Serve warm.
