This fresh and simple dish adds vibrant green color to your dinner table.
Ingredients
- 2 teaspoons canola oil
- 1 cup snow peas, trimmed
- 1 cup sugar snap peas, fresh or frozen
- 2 cups frozen peas (8 ounces)
- 1/2 teaspoon freshly grated lemon zest
- 4 teaspoons lemon juice
- 1-1/2 teaspoons dried tarragon
- 1 teaspoon butter
- Sea salt to taste
Directions
- Place the oil in a large sauté pan and set over medium-heat.
- Add in the snow peas and sugar snap peas and sauté for 2 minutes, then add the peas and cook for an additional 3 minutes.
- Remove the pan from the heat and add the lemon zest, lemon juice, tarragon, butter and salt, and stir to combine. Serve warm.
