Pasta with Leeks, Peas and Proscuitto is a quick and easy weeknight dinner.
Ingredients
- Coarse salt and pepper
- 12 ounces spaghetti
- 4 tablespoons butter
- 2 medium leeks (white and light green parts cut into 2 inch pieces)
- 1-10 ounce package frozen peas
- 2 tablespoons lemon juice
- 2 ounces prosciutto cut into thin strips
- 2 ounces Parmesan cheese (shaved)
Directions
- Cook pasta until al dente
- Drain and return to pot
- Melt 1 tablespoon butter in large skillet
- Add leeks and season with salt and pepper
- Cook leeks until soft and add peas until warm warm
- Add leak mixture to drained pasta.
- Add lemon juice, proscuitto and remaining butter
- Add pasta water until creamy and moist
- Fold in shaved Parmesan
