Pasta with Leeks, Peas and Proscuitto

Pasta with Leeks, Peas and Proscuitto is a quick and easy weeknight dinner.


  • Coarse salt and pepper
  • 12 ounces spaghetti
  • 4 tablespoons butter
  • 2 medium leeks (white and light green parts cut into 2 inch pieces)
  • 1-10 ounce package frozen peas
  • 2 tablespoons lemon juice
  • 2 ounces prosciutto cut into thin strips
  • 2 ounces Parmesan cheese (shaved)


  1. Cook pasta until al dente
  2. Drain and return to pot
  3. Melt 1 tablespoon butter in large skillet
  4. Add leeks and season with salt and pepper
  5. Cook leeks until soft and add peas until warm warm
  6. Add leak mixture to drained pasta.
  7. Add lemon juice, proscuitto and remaining butter
  8. Add pasta water until creamy and moist
  9. Fold in shaved Parmesan
