Papaya is one of the strongest natural tenderizers for meats, poultry and fish. Its sweet taste also adds delicious flavor and exotic flair.


  • 1 papaya, thinly sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper


  1. Place half the sliced papaya in a glass baking dish, top with the protein of your choice and then cover with the remaining papaya.
  2. Place the soy sauce, sugar, salt and pepper into a bowl and whisk vigorously until the sugar and salt have dissolved. Pour the dressing over the papaya mixture and then cover the dish with plastic wrap. For beef, marinate mixture overnight, poultry for up to 6 hours and fish for no more than 2.
