Here's a great recipe for papaya and smoked salmon salad; it makes a great first course.


  • 1 medium papaya
  • 1 medium orange
  • 1 medium red onion
  • 6 leaves of Romaine lettuce
  • 4 slices smoked salmon
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • Salt and pepper to taste


  1. Thinly slice fruit and red onion. Wash and chop lettuce. Combine and toss all together with balsamic, olive oil, and honey. Lay the salmon strips on top.
  2. Serve chilled. Serve on pretty plates presented with bread sticks for a lovely first course.
