This Bols Genever and cognac blended cocktail, which means ‘Old Square’ in Dutch, is a concoction created by Michael Dietsch, a writer, editor and bartender extraordinaire. 


  • 1-1/2 ounces Bols Genever
  • 1-1/2 ounces cognac
  • 1/2 ounces sweet vermouth
  • 1 teaspoon Benedictine
  • 2 dashes Angostura bitters
  • 2 dashes Peychaud’s bitters


  1. Pour all of the ingredients into a cocktail shaker filled with ice.
  2. Slowly stir the mixture for about 30 seconds and then strain into a cocktail glass with 1 large ice cube; serve immediately.
