Feel the sunshine and tropical breezes with every bite of Orange Coconut Pie.
Ingredients
- 1 cup orange juice
- 1 cup orange sections, cut in pieces
- 2 tablespoons grated orange rind
- 1 cup sugar
- 5 tablespoons cornstarch
- 3 egg yolks, beaten
- 2 tablespoons butter
- 2 tablespoons lemon juice
- 1, 9 inch baked pie shell
- coconut to sprinkle over top
Directions
- Combine orange juice, sections, grated rind, sugar and cornstarch. Cook on low until clear. Add a little hot mixture to beaten egg yolks, stirring constantly until remainder of hot mixture has been added. Cook five minutes longer. Remove from heat.
- Blend in lemon juice and butter. Pour into pie shell. Sprinkle with coconut. Chill.
