Orange Coconut Meringue Pie

  • 1 cup orange juice
  • 1 cup orange sections, cut in pieces
  • 2 tablespoons grated orange rind
  • 1 cup sugar
  • 5 tablespoons cornstarch
  • 3 egg yolks, beaten
  • 2 tablespoons butter
  • 2 tablespoons lemon juice
  • 1, 9 inch baked pie shell
  • coconut to sprinkle over top


  1. Combine orange juice, sections, grated rind, sugar and cornstarch. Cook on low until clear. Add a little hot mixture to beaten egg yolks, stirring constantly until remainder of hot mixture has been added. Cook five minutes longer. Remove from heat.
  2. Blend in lemon juice and butter. Pour into pie shell. Sprinkle with coconut. Chill.
