Gomme syrup, or ‘Gum’ Syrup in French, is a sweetener used in mixed drinks in place of a classic simple syrup or sugar. It contains the added ingredient of gum Arabic which acts as an emulsifier and gives this syrup its smooth texture.


  • 2 dashes gomme syrup
  • 3 dashes orange bitters
  • 3 dashes absinthe
  • 2/3 gin
  • Lemon peel to garnish


  1. Place a cocktail glass in the freezer for 5 minutes to chill.
  2. Put all of the ingredients, except for the garnish, into a cocktail shaker filled with ice and vigorously shake the mixture for 35 seconds.
  3. Strain the mixture into the prepared glass, squeeze then garnish with the lemon peel and serve immediately.
