Enjoy this spread slathered on toasted garlic bread or as a dip for tortilla chips. Make this recipe with black or green olives, depending on your own personal preference.


  • 1 (6-ounce) can pitted ripe Greek green or black olives, drained
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar
  • 1/4 teaspoon coarse ground black pepper


  1. Place the olives, lemon juice, olive oil, vinegar and pepper in a food processor, and process until mixture is creamy.
  2. Transfer to a small bowl and serve as a dip or spread.
