Melt in your mouth Oatmeal Shortbread is a good treat to eat yourself or give take to your friends as a hostess gift.
Ingredients
- 1/2 cup old-fashioned rolled oats
- 3/4 cup flour
- 1/3 cup confectioner's sugar
- 1/2 teaspoon salt
- 1 stick unsalted butter
Directions
- Preheat oven to 325 degrees
- Toast oats on baking sheet 4-6 minutes
- Add 1/4 cup oats and next three ingredients to a food processor and pulse until finely ground
- Add cold butter and continue to pulse until mixture is of a course grain consistency
- Press into an 8-inch pan and lightly press remaining oats on top
- Bake until golden for 30 minutes
- While still hot score the cookies into 16 squares and then into triangles
- Cool pan on a wire rack
