Melt in your mouth Oatmeal Shortbread is a good treat to eat yourself or give take to your friends as a hostess gift.


  • 1/2 cup old-fashioned rolled oats
  • 3/4 cup flour
  • 1/3 cup confectioner's sugar
  • 1/2 teaspoon salt
  • 1 stick unsalted butter


  1. Preheat oven to 325 degrees
  2. Toast oats on baking sheet 4-6 minutes
  3. Add 1/4 cup oats and next three ingredients to a food processor and pulse until finely ground
  4. Add cold butter and continue to pulse until mixture is of a course grain consistency
  5. Press into an 8-inch pan and lightly press remaining oats on top
  6. Bake until golden for 30 minutes
  7. While still hot score the cookies into 16 squares and then into triangles
  8. Cool pan on a wire rack
