Get out the bagpipes!  Traditional and classic Oatmeal Scotchies are chockful of butterscotch flavored morsels.

Ingredients

  • 1 1/4 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 sticks butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups old fashioned or quick oats, uncooked
  • 2 cups butterscotch flavored morsels

Directions

  1. Preheat oven to 375 degrees F. In small bowl, combine flour, baking soda, salt and cinnamon; set aside.
  2. In large mixer bowl, beat butter, sugar, brown sugar, eggs and vanilla until creamy. Gradually beat in flour mixture.
  3. Stir in oats and butterscotch flavored morsels. Drop by measuring tablespoonful onto ungreased cookie sheets. Bake 7 to 8 minutes for chewier cookies; 9 to 10 minutes for crispier cookies. Let stand on cookie sheets 2 minutes. Remove; cool.
