Oatmeal Coconut Cake is a hearty, moist cake perfect for dessert or an after school snack.

Ingredients

  • Cake: 1/2 cup shortening
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup Quaker oatmeal
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 1/3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • Topping: 1 1/2 cups brown sugar
  • 1 1/2 cups coconut
  • 1/2 cup half and half
  • 1/4 teaspoon butter
  • 1/2 teaspoon vanilla
  • 1 1/2 cups pecans, chopped

Directions

  1. Pour 1 1/4 cups boiling water on oatmeal and let stand until cool. Cream butter, sugar, eggs and vanilla. Add oatmeal and dry ingredients. Bake in a greased and floured 9 by 13 inch pan for 30 minutes at 350 degrees F.
  2. Prepare Topping: Mix all ingredients. Spread on hot cake and return to oven for 25 minutes more or until brown.
