Oatmeal Coconut Cake is a hearty, moist cake perfect for dessert or an after school snack.
Ingredients
- Cake: 1/2 cup shortening
- 1 cup brown sugar
- 1 cup white sugar
- 1 cup Quaker oatmeal
- 3 eggs
- 1 teaspoon vanilla
- 1 1/3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- Topping: 1 1/2 cups brown sugar
- 1 1/2 cups coconut
- 1/2 cup half and half
- 1/4 teaspoon butter
- 1/2 teaspoon vanilla
- 1 1/2 cups pecans, chopped
Directions
- Pour 1 1/4 cups boiling water on oatmeal and let stand until cool. Cream butter, sugar, eggs and vanilla. Add oatmeal and dry ingredients. Bake in a greased and floured 9 by 13 inch pan for 30 minutes at 350 degrees F.
- Prepare Topping: Mix all ingredients. Spread on hot cake and return to oven for 25 minutes more or until brown.
