These muffins are easy to make and are a healthy treat for breakfast.

Ingredients

  • 1 cup rolled oats
  • 1 cup buttermilk
  • 1/2 cup butter
  • 1/2 cup dark brown sugar
  • 1 egg
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup raisins

Directions

  1. Combine oats and buttermilk and set aside for 1 hour.
  2. Preheat oven to 400 degrees.
  3. Cream butter and sugar. Add beaten egg.
  4. In a separate bowl, combine flour, baking powder, baking soda and salt. Add to butter mixture.
  5. Stir in oat mixture.
  6. Fold in raisins, but do not over mix.
  7. Pour batter into prepared muffin pan.
  8. Bake at 400 degrees for 20-25 minutes.
