These muffins are easy to make and are a healthy treat for breakfast.
Ingredients
- 1 cup rolled oats
- 1 cup buttermilk
- 1/2 cup butter
- 1/2 cup dark brown sugar
- 1 egg
- 1 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 cup raisins
Directions
- Combine oats and buttermilk and set aside for 1 hour.
- Preheat oven to 400 degrees.
- Cream butter and sugar. Add beaten egg.
- In a separate bowl, combine flour, baking powder, baking soda and salt. Add to butter mixture.
- Stir in oat mixture.
- Fold in raisins, but do not over mix.
- Pour batter into prepared muffin pan.
- Bake at 400 degrees for 20-25 minutes.
