These chewy cookies make an excellent afternoon snack, especially alongside a hot cup of coffee.
Ingredients
- 1-1/4 cups butter
- 3/4 cup brown sugar
- 1/2 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1-1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 3 cups quick-cooking oats
- 2 ripe bananas, sliced
- 1-1/2 cups raisins
- 1 cup flaked coconut
Directions
- Cream butter, sugar and brown sugar.
- Beat in egg and vanilla.
- In a separate bowl, combine flour, baking soda, salt, cinnamon and nutmeg.
- Blend flour combination into egg mixture.
- Fold in oats, bananas, raisins and coconut.
- Drop by teaspoon onto greased cookie sheets.
- Bake at 375 degrees for 12-15 minutes or until golden brown.
