Tender Nutty Pineapple Cookies are packed with pecans and pineapple.

Ingredients

1 cup shortening
1 cup packed brown sugar
1 cup sugar
4 cups flour
2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon soda
2 eggs
1 cup crushed pineapple
1 teaspoon vanilla extract
1 cup pecans, chopped

Directions

Cream shortening and sugars together in bowl.
Sift dry ingredients together. Add 1egg, half the pineapple and half the dry ingredients, beating well after each addition. Repeat and add all remaining ingredients.
Drop by teaspoonfuls onto greased cookie sheet. Bake at 400 degrees F for 10 minutes or until brown.
