This refreshing smoothie can be made with soy, rice or almond milk for a delicious and creamy non-dairy alternative. For a less sweet version, use plain Greek yogurt instead of the vanilla-flavored variety.

Ingredients

  • 3 small ripe apricots
  • 1 sliced banana
  • 1/2 cup enriched soy, rice or almond milk
  • 1/2 cup apple juice
  • 1/2 cup vanilla yogurt

Directions

  1. Cut the apricots in half and then remove the pits.
  2. Place all of the ingredients into a blender and process until the mixture is smooth. Pour into a tall glass and serve immediately.
