This recipe for butterscotch pie makes two 9-inch pies; one to keep and one to share.

Ingredients

  • 3/4 cups brown sugar
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 teaspoon vanilla
  • 3 egg yolks
  • 2 9-inch pie crusts

Directions

  1. In a saucepan, mix together brown sugar, flour, butter and salt; cook until melted.
  2. Add milk.
  3. Beat egg yolks and slowly add to mixture.
  4. Add vanilla.
  5. Continue to cook until mixture becomes thick.
  6. Pour into pre-baked pie crust; meringue the top.
