New Potatoes with Olives is a flavorful side dish.
- 4 small red potatoes
- 1/2 teaspoon salt
- 1/3 cup sour cream
- 4 large pitted ripe olives, minced
- Heat potatoes in salted water, enough to cover, to boiling. Reduce heat to medium-low and cook 10 to 15 minutes or until potatoes are fork tender. Drain; cut each in half.
- To serve: Spoon a dollop of sour cream on each potato half; top with minced ripe olives.
