New Potatoes with Olives is a flavorful side dish.


  • 4 small red potatoes
  • 1/2 teaspoon salt
  • 1/3 cup sour cream
  • 4 large pitted ripe olives, minced


  1. Heat potatoes in salted water, enough to cover, to boiling. Reduce heat to medium-low and cook 10 to 15 minutes or until potatoes are fork tender. Drain; cut each in half.
  2. To serve: Spoon a dollop of sour cream on each potato half; top with minced ripe olives.
