Mussels in Wine is a classic Italian dish. Serve with lots of Italian bread to sop up the flavorful broth.
Ingredients
- 3 dozen large mussels
- 3 tablespoons olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1, 16 ounce can tomatoes
- 3/4 cup dry white wine
- 1/4 teaspoon basil
- 2 tablespoons parsley, chopped
Directions
- With stiff brush, scrub mussels under running water to remove any sand; remove beards. Set aside.
- In 5 quart Dutch oven or saucepan over medium heat, in hot oil, cook onion and garlic until tender, stirring occasionally. Stir in tomatoes with their liquid, wine and basil; over high heat, heat to boiling. Add mussels; heat to boiling.
- Reduce heat to low; cover and simmer until mussels open, about 5 minutes, stirring occasionally. Sprinkle with parsley. Serve mussels in bowls with their broth.
