Mushroom and Barley Casserole is a wonderful side dish next to a leg of lamb.

Ingredients

  • 1 cup barley, browned in 1/2 stick butter
  • 6 chicken bouillon cubes dissolved in 4 cups hot water
  • 1/2 pound mushrooms, sliced
  • 1 onion, chopped
  • 1/2 stick butter

Directions

  1. Add broth water to barley. In a separate saucepan, saute mushrooms and onions in 1/2 stick butter. Add to barley mixture. Simmer on stove for 1 hour, then pour into a covered casserole. Bake at 350 degrees F for 1 more hour.
