Mozzarella Meat Loaf is inspired by Italian flavors.

Ingredients

  • 1 1/2 pounds ground beef
  • 1/2 cup dry bread crumbs
  • 1 egg, slightly beaten
  • 1 teaspoon instant minced onion
  • 3/4 teaspoons salt
  • 1/2 teaspoon oregano
  • 1, 15 ounce can tomato sauce
  • 1 1/2 cups Mozzarella cheese, shredded
  • 1, 4 ounce can mushrooms

Directions

  1. Combine first 6 ingredients with 3/4 cup tomato sauce in bowl, mixing well. Pat meat mixture into 9 by 13 inch rectangle on waxed paper. Sprinkle with cheese and mushrooms. Roll as for jelly roll, sealing edge and ends. Place seam side down in 8 by 12 inch baking pan. Bake at 375 degrees F for 30 minutes.
  2. Pour off drippings. Spoon remaining tomato sauce over loaf. Bake for 30 minutes longer.
