Molasses Sponge Cake is an old fashioned recipe. Serve with whipped cream.
Ingredients
- 4 eggs, separated
- 1/2 teaspoon salt
- 1 1/2 cup pastry flour
- 2 teaspoons baking powder
- 1/2 cup cold coffee
- 10 walnuts, finely chopped
- 1 cup sugar
- 1/2 cup molasses
- 1 teaspoon vanilla
Directions
- Beat egg yolks until thick and light. Add sugar gradually, then add molasses, coffee, a little at a time, beating thoroughly. Sift flour with salt and baking powder and add to egg yolk mixture.
- Beat egg whites until stiff. Fold in egg whites, nuts and vanilla.
- Pour in an ungreased 8 inch square baking pan and bake at 325 degrees F for 35 to 40 minutes. Serve with whipped cream.
