Molasses Sponge Cake is an old fashioned recipe.  Serve with whipped cream.

Ingredients

  • 4 eggs, separated
  • 1/2 teaspoon salt
  • 1 1/2 cup pastry flour
  • 2 teaspoons baking powder
  • 1/2 cup cold coffee
  • 10 walnuts, finely chopped
  • 1 cup sugar
  • 1/2 cup molasses
  • 1 teaspoon vanilla

Directions

  1. Beat egg yolks until thick and light. Add sugar gradually, then add molasses, coffee, a little at a time, beating thoroughly. Sift flour with salt and baking powder and add to egg yolk mixture.
  2. Beat egg whites until stiff. Fold in egg whites, nuts and vanilla.
  3. Pour in an ungreased 8 inch square baking pan and bake at 325 degrees F for 35 to 40 minutes. Serve with whipped cream.
